Racket string has a major part to play in the way a racket feels and performs. Whilst the stiffness of the frame and the thickness of the beam of the racket determine its characteristics, the way it "plays" can be altered by the way it is strung.
String tension can make a big difference. Higher tensions give less power and more control/feel whilst lower tensions create a "trampoline" effect giving more power and less feel/control.
Strings are also available to aid a particular players style i.e. Tough durable strings for "string breakers", rough textured strings for players who like to use alot of spin and power strings for players who like to serve and volley.
